Maybe an alternative to the tricky-to-flip ones? We may try these this am....I need appey-sauce tho....

2 eggs
1/2 c unsweet applesauce
1/2 c nut butter (not peanut! cashew/mac nut butter works well)
1/4 tsp cinnamon
1/4 tsp vanilla
coconut oil
Mix all except coco oil. Grease nonstick skillet with coco oil, spread some batter in pan to form a pancake, cook over low-med heat. Flip after 1-2 min, careful not to burn.
Toppings: chopped apples with cinn, heated blueberries, real maple syrup, unsweet applesauce...
Zone info: 3 servings at: 1/2 C block, ~1/2 P block, 15 F blocks
OK: We had these, and they're.......they're good......just not Bisquick!!!! We had honey and/or apples and cinn on top- I think the recipe could use a dash of salt......but as for batter consistency, it's great- they're easy to flip.
